Program Description:

The graduate program offers graduate specialization in: (1) food science with emphasis on the chemical,microbiological, physical, and nutritional properties and behavior of food and food systems before and afterprocessing, including dairy and similar foods, food sanitation and contaminants, food lipids and proteins, foodfermentations, and waste disposal and utilization; (2) food engineering science in such areas as heat, mass, and momentum transfer, systems design, operations, and materials science; and (3) nutrition (MS only) with attention to nutrient requirements and biochemical and biophysical phenomena of nutrient utilization at the molecular, cellular, and organismic levels.
