Program Description:

The Department of Public Health, Food Studies and Nutrition, housed in the David B. Falk College of Sport and Human Dynamics, offers a Master of Arts (M.A.) and a Master of Science (M.S.) in nutrition. At the graduate level, students study the theory and application of nutrition science and prepare for research, teaching, or practice in clinical, community,
corporate, government, or educational settings. Graduates of the nutrition programs work in settings such as hospitals, long-term care facilities, health clinics and food companies.

Our Experimental Foods Laboratory is a 10-station culinary arts salon that showcases sophisticated teaching technologies and provides students with the opportunity to learn small quantity food preparation and food science associated with culinary techniques. The Nutrition Assessment, Education, & Counseling Center is currently under development. Students and faculty will be able to conduct nutritional assessments using current technologies for assessing body composition and clinical
skills (such as abdominal assessments, tube feedings, and diabetes management skills) using teaching mannequins. The Center will include small consultation rooms where students can develop counseling skills under faculty supervision and a small, residential-style demo kitchen for food demonstrations. The Department offers the course, Food, Wine, Culture, and Health – The Mediterranean Diet at SU’s campus in Florence. The course includes study of the features and health effects of the Mediterranean Diet with field trips to bakeries, vineyards, and olive oil pressing facilities.

Employment of dietitians continues to grow with the increased emphasis on disease prevention through improved dietary habits. Public interest in nutrition, a growing and aging population, the childhood and adult obesity epidemics and increased emphasis on health education and healthy lifestyles continue to spur demand for dietitians.
